Tamarind's owner Avtar Walia wanted "something spicy" for the name of his new restaurant
and found it in the sweet and sour tamarind, the fruit pod of a tall
semi-evergreen tree grown only in India. The pods contain small seeds and
sweet and sour pulp and are a highly valued ingredient in India's unique and
diverse cuisine.
